Goat meat, sour orange or lime juice, garlic, thyme, scotch bonnet pepper, epis (Haitian seasoning base), macaroni, cheese, milk, and fresh salad greens.
The goat is marinated in citrus and epis, then slow-cooked until tender before a final sear. The macaroni is baked separately with cheese and milk until golden.
Plated together with a fresh side salad for a balanced, hearty meal.

Traditionally served with pikliz (spicy pickled cabbage slaw) alongside diri kole (rice and beans) or fried plantains.

Chicken, sour orange or lime juice, garlic, thyme, epis, plantains, rice, red beans, and fresh salad greens.
The chicken is marinated in citrus and herbs, then fried until golden. Green plantains are sliced, fried, flattened, and fried again to make tostones.
Served hot with rice and beans and a side of tostones.
Vegetable stew served over seasoned rice and beans.
Cabbage, carrots, eggplant, watercress, garlic, epis, tomato paste, scotch bonnet pepper, rice, and red beans.
The vegetables are simmered slowly with seasoning until they break down into a thick, savory stew. Rice and beans are cooked separately alongside it.
Spoon the vegetable stew generously over a bed of rice and beans.
